Ingredients
- 2 c. instant potato flakes
- 8 oz. cream cheese
- 1 small onion, finely chopped
- 2 eggs, beaten
- 2 Tbsp. flour
- salt
- pepper
- 1 c. canned onion rings
Method
- Mix potato flakes according to package directions.
- Potatoes can be either hot or cold to measure.
- Bring cream cheese to room temperature.
- Add cream cheese, onion, eggs and flour to potatoes. Salt and pepper to taste.
- Mix thoroughly.
- Put in a 9-inch square pan that has been sprayed with Pam.
- Top with onion rings. Bake at 300° for 35 minutes.
