Ingredients

  • 2 c. instant potato flakes
  • 8 oz. cream cheese
  • 1 small onion, finely chopped
  • 2 eggs, beaten
  • 2 Tbsp. flour
  • salt
  • pepper
  • 1 c. canned onion rings

Method

  • Mix potato flakes according to package directions.
  • Potatoes can be either hot or cold to measure.
  • Bring cream cheese to room temperature.
  • Add cream cheese, onion, eggs and flour to potatoes. Salt and pepper to taste.
  • Mix thoroughly.
  • Put in a 9-inch square pan that has been sprayed with Pam.
  • Top with onion rings. Bake at 300° for 35 minutes.
