Ingredients
- leftover mashed potatoes (2 1/2 to 3 c.)
- 1 beaten egg
- 2 Tbsp. onion flakes
- 1 tsp. onion powder
- salt and pepper to taste
- fat
- 1/4 c. flour
Method
- Fluff up potatoes with an egg beater (or hand mixer).
- Mix in flour, beaten egg and seasonings.
- Shape into flat cakes and brown slowly in a little fat in skillet, turning until done evenly on each side.
