Ingredients

  • 4 x 100 g thin pork steaks
  • 2 tbsp plain flour, on a plate
  • 1 medium egg, beaten in a shallow bowl, seasoned
  • 100 g white breadcrumbs
  • 25 g grated Parmesan cheese
  • 2 tsp freshly chopped thyme leaves
  • 250 g long grain rice
  • 1 each green, red and yellow pepper, deseeded and cut into star shapes using a cookie cutter
  • 1 medium onion, peeled and thinly sliced
  • 4 tbsp vegetable oil
  • 250 ml ready made hollandaise sauce
  • 2-3 tbsp lemon juice

Method

  • Cook rice according to package instructions. Drain and set aside.
  • Meanwhile, heat 1 tbsp oil in a frying pan, add peppers and saute 5 mins, stirring occasionally. Add onion and saute 2-3 mins until softened.
  • Mix breadcrumbs with cheese and thyme. Dredge pork in flour, egg then breadcrumb mixture. Heat remaining oil in another frying pan, add pork and cook for 2-3 mins per side until golden brown.
  • To serve, warm hollandaise then add lemon juice to taste. Serve pork with rice, peppers, onion and hollandaise sauce. Garnish with thyme sprigs.
