- 4 x 100 g thin pork steaks
- 2 tbsp plain flour, on a plate
- 1 medium egg, beaten in a shallow bowl, seasoned
- 100 g white breadcrumbs
- 25 g grated Parmesan cheese
- 2 tsp freshly chopped thyme leaves
- 250 g long grain rice
- 1 each green, red and yellow pepper, deseeded and cut into star shapes using a cookie cutter
- 1 medium onion, peeled and thinly sliced
- 4 tbsp vegetable oil
- 250 ml ready made hollandaise sauce
- 2-3 tbsp lemon juice
Method
- Cook rice according to package instructions. Drain and set aside.
- Meanwhile, heat 1 tbsp oil in a frying pan, add peppers and saute 5 mins, stirring occasionally. Add onion and saute 2-3 mins until softened.
- Mix breadcrumbs with cheese and thyme. Dredge pork in flour, egg then breadcrumb mixture. Heat remaining oil in another frying pan, add pork and cook for 2-3 mins per side until golden brown.
- To serve, warm hollandaise then add lemon juice to taste. Serve pork with rice, peppers, onion and hollandaise sauce. Garnish with thyme sprigs.
