Ingredients

  • 1 tsp fennel seeds, crushed
  • 1 tbsp fresh dill, chopped
  • 2 tsp extra virgin olive oil
  • 4 None pork chops
  • 4 slices bacon, chopped
  • 4.5 oz frozen peas
  • 1 lb Brussels sprouts, halved lengthwise

Method

  • Preheat oven to 400°F. In a small bowl, combine fennel seeds, dill and oil. Rub over pork to coat. Season.
  • Heat a large nonstick frying pan over high heat. Sear pork until browned on both sides. Transfer to a roasting pan and bake for 5 mins, or until just cooked through. Remove from oven, cover with foil and let rest for 10 mins.
  • Meanwhile, add bacon to frying pan and cook, stirring, until browned. Add peas and cook for 1 min. Add Brussels sprouts and cook, stirring, over high heat until softened slightly. Season. Serve with pork chops.
