Ingredients

  • 3/4 lb. mushrooms, thinly sliced
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. minced onion
  • 1/4 c. butter
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. flour
  • 2 Tbsp. grated Parmesan cheese
  • 1 c. heavy cream
  • 2 egg yolks, slightly beaten
  • 2 Tbsp. soft bread crumbs

Method

  • Sprinkle mushrooms with lemon juice.
  • Simmer, lightly covered, with onion and 3 tablespoons of the butter.
  • Season with salt and pepper, stir in flour and cheese.
  • Cook for about 3 minutes. Place in buttered baking dish.
  • Beat together cream and egg yolks.
  • Pour over mushrooms.
  • Sprinkle with bread crumbs and dot with remaining butter.
  • Bake in preheated oven at 375° for about 15 minutes.
  • Makes 6 servings.
