- 3/4 lb. mushrooms, thinly sliced
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. minced onion
- 1/4 c. butter
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. flour
- 2 Tbsp. grated Parmesan cheese
- 1 c. heavy cream
- 2 egg yolks, slightly beaten
- 2 Tbsp. soft bread crumbs
Method
- Sprinkle mushrooms with lemon juice.
- Simmer, lightly covered, with onion and 3 tablespoons of the butter.
- Season with salt and pepper, stir in flour and cheese.
- Cook for about 3 minutes. Place in buttered baking dish.
- Beat together cream and egg yolks.
- Pour over mushrooms.
- Sprinkle with bread crumbs and dot with remaining butter.
- Bake in preheated oven at 375° for about 15 minutes.
- Makes 6 servings.
