Ingredients
- 1 qt. jar Vlasic Polish pickles
- 1/2 c. brine from pickles
- 3 c. peeled and diced potatoes
- 2 c. peeled and diced carrots
- 2 c. chopped onion
- 1 stick margarine
- 1 qt. chicken stock or bouillon cubes and water
- 1 c. cream
- pepper, bouillon powder or brine to taste
Method
- Dice all pickles from jar into 1/4-inch pieces.
- Saute onions in margarine until wilted.
- Add carrots and potatoes and saute until brown.
- Stir to heat through, then add chicken stock or bouillon cubes and water.
- Add pickles and 1/2 cup brine.
- Simmer about 20 minutes.
- Add 1 cup cream and season to taste.
- Serve hot or cold.
