Ingredients

  • 1 qt. jar Vlasic Polish pickles
  • 1/2 c. brine from pickles
  • 3 c. peeled and diced potatoes
  • 2 c. peeled and diced carrots
  • 2 c. chopped onion
  • 1 stick margarine
  • 1 qt. chicken stock or bouillon cubes and water
  • 1 c. cream
  • pepper, bouillon powder or brine to taste

Method

  • Dice all pickles from jar into 1/4-inch pieces.
  • Saute onions in margarine until wilted.
  • Add carrots and potatoes and saute until brown.
  • Stir to heat through, then add chicken stock or bouillon cubes and water.
  • Add pickles and 1/2 cup brine.
  • Simmer about 20 minutes.
  • Add 1 cup cream and season to taste.
  • Serve hot or cold.
