Ingredients

  • 3 - 4 ripe pears
  • 1/2 cup water
  • 1/2 cup sugar
  • Cake
  • 4 eggs
  • 1 cup of buttermilk pancake mix ( or 1 cup white flour and 1 tsp baking soda )
  • 1 cup sugar
  • 1/2 cup polenta
  • 1 cup milk

Method

  • 3 - 4 ripe pears stewed in 1/2 cup water with 1/2 cup sugar
  • Cake:
  • In a large mixing bowl add 4 eggs and 1 cup milk and beat until foamy.
  • Add dry ingredients and mix until incorporated.
  • Prepare a clay or stone shallow baking dish with butter ( you can melt butter and swish around pan or rub down pan with 2 tbs spoon butter leaving excess in the pan )
  • Add the fruit and juices evenly to the bottom of the pan, pour over batter and bake 35-45 minutes in a 350 oven until golden brown.
  • Serve warm with ice cream.
