Ingredients
- 3 - 4 ripe pears
- 1/2 cup water
- 1/2 cup sugar
- Cake
- 4 eggs
- 1 cup of buttermilk pancake mix ( or 1 cup white flour and 1 tsp baking soda )
- 1 cup sugar
- 1/2 cup polenta
- 1 cup milk
Method
- 3 - 4 ripe pears stewed in 1/2 cup water with 1/2 cup sugar
- Cake:
- In a large mixing bowl add 4 eggs and 1 cup milk and beat until foamy.
- Add dry ingredients and mix until incorporated.
- Prepare a clay or stone shallow baking dish with butter ( you can melt butter and swish around pan or rub down pan with 2 tbs spoon butter leaving excess in the pan )
- Add the fruit and juices evenly to the bottom of the pan, pour over batter and bake 35-45 minutes in a 350 oven until golden brown.
- Serve warm with ice cream.
