Ingredients
- 15 ml (1/2 oz) Poire William
- 15 ml (1/2 oz) peach liqueur
- 1 teaspoon elderflower cordial
- chilled Champagne or sparkling wine
- thin pear slice
Method
1. Pour the Poire William, peach liqueur and elderflower cordial into a chilled champagne flute, then slowly top up with Champagne or sparkling wine. Garnish with a pear slice.
*You can buy elderflower cordial, or make it at home. Boil 2 litres (70 oz/8 cups) water with 1 kg (2 lb 4 oz) sugar until the sugar dissolves and the syrup thickens slightly. Pour it onto six elderflower heads in a sterile glass jar and steep overnight. Strain, add lemon juice to taste and keep refrigerated for a few days. Dilute with water, if necessary.A recipe
