Ingredients

  • 19 c. tomatoes
  • 1 green pepper
  • 9 Tbsp. olive oil
  • 1 c. chopped onions
  • 1 tsp. minced garlic
  • 3 Tbsp. oregano
  • 3 Tbsp. basil
  • 1 bay leaf
  • 6 Tbsp. sugar
  • 2 Tbsp. salt
  • 2 Tbsp. pepper
  • 1 Tbsp. chili powder

Method

  • Put tomatoes and green pepper through the blender.
  • Cook onion in pan with olive oil until tender & add garlic.
  • In large pot mix in all other ingredients.
  • Add in 2 (12 oz.) cans tomato paste.
  • Add in the garlic/olive oil mixture.
  • Bring to a boil. Turn down & simmer for 30 minutes. Put into jars, seal & water bath for 40 minutes.
