Ingredients

  • 1 pie shell, unbaked, 9-inch
  • 34 lb hot Italian sausage
  • 3 eggs
  • 1 34 cups hot milk
  • 2 cups mozzarella cheese, shredded
  • 14 cup canned green chili, finely chopped (or red or green bell pepper)

Method

  • Preheat oven to 400*.
  • Remove sausage from casing and crumble into frying pan.
  • Cook until brown, breaking up with a fork.
  • Drain well.
  • Beat eggs and stir in milk, sausage, cheese and chilies (or peppers).
  • Pour into pastry shell.
  • Bake 40-45 minutes, or until knife inserted off center comes out clean.
  • Let stand 10 minutes before serving.
