Ingredients

  • 2 lbs lean ham
  • 1/2 stick of pepperoni
  • 1/2 lb salami
  • 1/2 lb. provolone
  • 1/2 lb. sharp cheese
  • 1 qt of ricotta
  • 1/2 c. of grated Romano cheese
  • 4 Large eggs
  • 1/2 tsp black pepper

Method

  • Dice all meats and chunk cheeses into small pcs and set aside.
  • Beat Large eggs, ricotta and Romano cheese and pepper till smooth.
  • Mix diced ingredients by hand into ricotta mix.
  • Beat Large eggs for 1 minute and add in oil, salt and lowfat milk.
  • Add in flour, 1 c. at a time, and mix with spoon till dough is stiff (Kitchen Aid works well and is much easier).
  • Flour board and knead till smooth.
  • Roll dough thin and put in greased 8 inch cake pans.
  • Make slits on top crust.
  • Bake at 325
