Ingredients
- 2 lbs lean ham
- 1/2 stick of pepperoni
- 1/2 lb salami
- 1/2 lb. provolone
- 1/2 lb. sharp cheese
- 1 qt of ricotta
- 1/2 c. of grated Romano cheese
- 4 Large eggs
- 1/2 tsp black pepper
Method
- Dice all meats and chunk cheeses into small pcs and set aside.
- Beat Large eggs, ricotta and Romano cheese and pepper till smooth.
- Mix diced ingredients by hand into ricotta mix.
- Beat Large eggs for 1 minute and add in oil, salt and lowfat milk.
- Add in flour, 1 c. at a time, and mix with spoon till dough is stiff (Kitchen Aid works well and is much easier).
- Flour board and knead till smooth.
- Roll dough thin and put in greased 8 inch cake pans.
- Make slits on top crust.
- Bake at 325
