Ingredients
- 1 c. pinto beans, drained and mashed
- 3 c. white sugar
- 4 eggs
- 2 sticks margarine, melted and cooled
- 1 c. chopped pecans
- 1 c. coconut
- 1 tsp. vanilla
- 3 unbaked shallow pie crusts
Method
- Beat eggs. Add margarine and sugar. Stir in beans. Add coconut, nuts and vanilla. Pour into the pie shells. Bake in 350° preheated oven for approximately 45 minutes or until firm.
