Ingredients
- 1 (20 oz.) can crushed pineapple (undrained)
- 2 Tbsp. cornstarch
- 1/2 c. granulated sugar
- 2 Tbsp. lemon juice
- 1 c. brown sugar
- 1 tsp. salt
- 1 c. all-purpose flour
- 1 c. shortening
- 2 1/2 c. quick cooking oatmeal
Method
- Combine pineapple, cornstarch, granulated sugar and lemon juice in saucepan; cook until thickened.
- Combine brown sugar, salt, flour, shortening and oatmeal in bowl.
- Spread 3/4 of this mixture in a 9 x 13-inch pan; pat down.
- Spread pineapple mixture over this.
- Sprinkle with remaining oatmeal mixture.
- Bake in 350° oven for 30 to 40 minutes.
