Ingredients

  • 1 (20 oz.) can crushed pineapple (undrained)
  • 2 Tbsp. cornstarch
  • 1/2 c. granulated sugar
  • 2 Tbsp. lemon juice
  • 1 c. brown sugar
  • 1 tsp. salt
  • 1 c. all-purpose flour
  • 1 c. shortening
  • 2 1/2 c. quick cooking oatmeal

Method

  • Combine pineapple, cornstarch, granulated sugar and lemon juice in saucepan; cook until thickened.
  • Combine brown sugar, salt, flour, shortening and oatmeal in bowl.
  • Spread 3/4 of this mixture in a 9 x 13-inch pan; pat down.
  • Spread pineapple mixture over this.
  • Sprinkle with remaining oatmeal mixture.
  • Bake in 350° oven for 30 to 40 minutes.
