Ingredients
- 4 mint leaves
- 45 ml (1 1/2 oz) white rum
- 80 g (2 1/2 oz/1/2 cup) diced fresh pineapple
- 4 lychees, peeled and seeded
- 15 ml (1/2 oz) pineapple juice
- 15 ml (1/2 oz) lime juice
- 15 ml (1/2 oz) sugar syrup
- 1 cup crushed ice
- pineapple leaves
- mint sprig
Method
1. Place the mint, rum, pineapple, lychees, pineapple juice, lime juice and sugar syrup in a blender. Add the crushed ice and blend until the mixture is the consistency of shaved ice. Pour into a large chilled cocktail glass and garnish with pineapple leaves and a sprig of mint.
