Ingredients

  • 4 mint leaves
  • 45 ml (1 1/2 oz) white rum
  • 80 g (2 1/2 oz/1/2 cup) diced fresh pineapple
  • 4 lychees, peeled and seeded
  • 15 ml (1/2 oz) pineapple juice
  • 15 ml (1/2 oz) lime juice
  • 15 ml (1/2 oz) sugar syrup
  • 1 cup crushed ice
  • pineapple leaves
  • mint sprig

Method

1. Place the mint, rum, pineapple, lychees, pineapple juice, lime juice and sugar syrup in a blender. Add the crushed ice and blend until the mixture is the consistency of shaved ice. Pour into a large chilled cocktail glass and garnish with pineapple leaves and a sprig of mint.
