Ingredients

  • 1 (8 ounce) can crushed pineapple
  • 1 (2 ounce) packagesugar free lime gelatin
  • 1 cup boiling water
  • 2 (8 ounce) packages cream cheese
  • 1 cup chopped celery
  • 12 cup chopped pecans

Method

  • drain pineapple reserving juice and set aside.
  • In a medium bowl stir in gelatin and boiling for 2 minutes.
  • stir in pineapple juice.
  • stir in cream cheese until blended.
  • stir in pineapple and celery until combined.
  • pour into a 2 quart baking dish.
  • Top with pecans and chill 3 hours.
