- 1 c. light brown sugar
- 1/2 c. shortening (peanut butter)
- 1 egg, unbeaten
- 1 tsp. vanilla
- 3/4 c. crushed pineapple
- 2 c. flour, sifted
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 3/4 c. walnuts, chopped
- 1/2 c. raisins
- 1/2 tsp. salt
Method
- Put brown sugar, shortening, egg and vanilla into a mixing bowl; mix until well blended.
- Spoon pineapple, measure accurately, and blend into sugar mixture.
- Sift together flour, soda and salt; stir into sugar mixture.
- Mix walnuts and raisins into batter.
- Drop by heaping teaspoonfuls onto ungreased baking sheet.
- Bake at 375° about 12 minutes or until lightly browned. Makes 3 dozen.
