Ingredients

  • 1 c. light brown sugar
  • 1/2 c. shortening (peanut butter)
  • 1 egg, unbeaten
  • 1 tsp. vanilla
  • 3/4 c. crushed pineapple
  • 2 c. flour, sifted
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 c. walnuts, chopped
  • 1/2 c. raisins
  • 1/2 tsp. salt

Method

  • Put brown sugar, shortening, egg and vanilla into a mixing bowl; mix until well blended.
  • Spoon pineapple, measure accurately, and blend into sugar mixture.
  • Sift together flour, soda and salt; stir into sugar mixture.
  • Mix walnuts and raisins into batter.
  • Drop by heaping teaspoonfuls onto ungreased baking sheet.
  • Bake at 375° about 12 minutes or until lightly browned. Makes 3 dozen.
