Ingredients

  • 1 3/4 c. flour
  • 1/2 tsp. soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. brown sugar, firmly packed
  • 1/2 c. white sugar
  • 1/2 c. shortening
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 c. drained crushed pineapple
  • 1/2 c. chopped nuts (optional)

Method

  • Combine flour, soda, baking powder and salt; set aside. Combine sugars and shortening; cream until fluffy.
  • Add egg and vanilla; beat well.
  • Add dry ingredients; mix well.
  • Stir in pineapple and nuts.
  • Drop by heaping teaspoonful onto lightly greased sheet.
  • Bake at 350° for 10 minutes.
  • Cool.
  • Yields 5 dozen.
