Ingredients

  • 1 cup Coconut Milk
  • 1/2 cups Sugar
  • 2 Tablespoons White Rum
  • 1 pinch Salt
  • 2 cups Pineapple, Cubed
  • 1 dash Coconut Extract

Method

  • Add coconut milk, sugar, rum and salt to a small saucepan. Warm over medium heat until sugar is dissolved. Transfer coconut mixture and pineapple to a blender and pulse until smooth. Add coconut extract.
  • Strain through a sieve and chill 4 hours or up to overnight. Freeze using ice cream machine according to manufacturer's instructions. Let set completely in freezer. Serve with whipped cream or desired toppings.
  • Makes about 1 quart.
