Ingredients
- 1 cup Coconut Milk
- 1/2 cups Sugar
- 2 Tablespoons White Rum
- 1 pinch Salt
- 2 cups Pineapple, Cubed
- 1 dash Coconut Extract
Method
- Add coconut milk, sugar, rum and salt to a small saucepan. Warm over medium heat until sugar is dissolved. Transfer coconut mixture and pineapple to a blender and pulse until smooth. Add coconut extract.
- Strain through a sieve and chill 4 hours or up to overnight. Freeze using ice cream machine according to manufacturer's instructions. Let set completely in freezer. Serve with whipped cream or desired toppings.
- Makes about 1 quart.
