Ingredients
- 5 lb. small red potatoes
- 1 pt. mayonnaise
- 8 oz. sour cream
- 4 oz. evaporated milk
- 1/4 c. salad oil
- 1/4 c. vinegar
- 1 carrot, grated
- 3 ribs celery, grated
- 1 small onion, grated
- 1/2 c. chopped parsley
- salt and pepper to taste
Method
- Cook potatoes in jackets.
- Whisk mayonnaise, sour cream, evaporated milk, oil and vinegar together in a bowl.
- Peel and slice potatoes.
- Mix warm potatoes with salad dressing, grated vegetables and parsley.
- Season with salt and pepper.
- Chill overnight.
