  • roast beef (cut of your choice)

Method

  • Heat oven to 325°.
  • Salt and pepper roast, which should be at room temperature, so take out of refrigerator early.
  • Place roast on rack in a shallow baking dish and put in oven.
  • Roast for 1 hour, then turn oven off.
  • Do not open door; it ruins the whole process.
  • Allow 3 hours in oven to complete cooking.
  • It can go a little longer, if needed.
  • About 20 minutes before you want dinner on the table, turn the oven back on to 300° to warm up roast.
