Ingredients

  • 1 1/2 cups pancake and baking mix
  • 1 cup sour cream
  • 1/4 cup chopped fresh chives*
  • 1/4 cup milk
  • 1 Land O Lakes Egg, slightly beaten
  • 1/4 teaspoon garlic powder
  • 1/3 cup chopped pepperoni

Method

  • Heat oven to 400F.
  • Spray 24 mini muffin pan cups with no-stick cooking spray; set aside.
  • Combine all ingredients except pepperoni in bowl.
  • Stir just until moistened.
  • Gently stir in pepperoni.
  • Spoon batter into prepared muffin pan cups, filling each 3/4 full.
  • Bake 15-17 minutes or until lightly browned.
  • Cool 5 minutes; remove from pans.
  • *Substitute 4 teaspoons dried chives.
