Ingredients

  • 1 c. sugar
  • 3/4 c. light corn syrup
  • 2/3 c. water
  • 1 Tbsp. cornstarch
  • 2 Tbsp. butter
  • 1 tsp. salt
  • 1 Tbsp. peppermint extract
  • 8 to 10 drops red food color

Method

  • Grease baking pans with some butter.
  • Heat all ingredients except the peppermint extract and food color just to boiling in saucepan over medium heat, stirring constantly.
  • Cook without stirring to 256° on candy thermometer or until a small amount of the mixture dropped into glass of very cold water forms a ball, about 30 minutes.
  • Remove from heat and stir in 1 tablespoon extract.
  • Pour half the mixture into one of the buttered pans. Stir 8 to 10 drops color into remaining mixture, then pour into other buttered pan.
  • Let cool 15 to 20 minutes.
