Ingredients
- 1 c. sugar
- 3/4 c. light corn syrup
- 2/3 c. water
- 1 Tbsp. cornstarch
- 2 Tbsp. butter
- 1 tsp. salt
- 1 Tbsp. peppermint extract
- 8 to 10 drops red food color
Method
- Grease baking pans with some butter.
- Heat all ingredients except the peppermint extract and food color just to boiling in saucepan over medium heat, stirring constantly.
- Cook without stirring to 256° on candy thermometer or until a small amount of the mixture dropped into glass of very cold water forms a ball, about 30 minutes.
- Remove from heat and stir in 1 tablespoon extract.
- Pour half the mixture into one of the buttered pans. Stir 8 to 10 drops color into remaining mixture, then pour into other buttered pan.
- Let cool 15 to 20 minutes.
