Ingredients

  • 3 cup hot cooked rice
  • 1 lb round steak 0.5 inch thick
  • 1 Tbsp paprika
  • 2Tbsp butter
  • 2 cloves garlic crushed
  • 1.5 cup beef broth
  • 1 cup green onions sliced
  • 2 green pepper cut 1 inch strips
  • 2Tbsp corn starch
  • 0.25 cup water and soy sauce
  • 2 large tomatoes (cut in length)

Method

  • while rice is cooking pound steak to 1/4 inch thickness and cut into 1/4 inch stips
  • sprinkle meat with paprika and allow to stand while preparing other ingrediants
  • using a large skillet brown meat in butter
  • add garlic and broth
  • cover and simmer for 30 mins
  • stir in green onions and green peppers
  • cover cook 5mins more
  • blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring until clear and thickened in about 2mins
  • Add tomatoes and stir gently. Serve over bed of rice.
