Ingredients
- 250 g (9 oz) penne
- 3 tablespoons olive oil
- 3 bacon slices, chopped
- 1 onion, chopped
- 4 tablespoons lemon juice
- 1 tablespoon thyme leaves
- 50 g (1 3/4 oz/1/3 cup) chopped sun-dried tomatoes
- 80 g (2 3/4 oz/1/2 cup) pine nuts, toasted
Method
1. Cook the pasta in a large saucepan of rapidly boiling salted water until al dente. Drain well and return to the pan to keep warm.
2. Heat the oil in a large saucepan. Add the bacon and onion and stir over medium heat for 4 minutes or until the bacon is brown and the onion has softened. Add the pasta, lemon juice, thyme, tomato and pine nuts. Stir over low heat for 2 minutes to heat through. Serve immediately.
