- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1 egg, lightly beaten
- 1/2 cup molasses
- 1 tablespoon grated orange rind
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup chopped pecans
- 3/4 cup unsweetened orange juice
Method
- Beat butter in a large bowl at medium speed of an electric mixer until creamy; gradually add brown sugar, beating well. Add egg, and beat well. Stir in molasses and orange rind.
- Combine flour and next 6 ingredients; add to creamed mixture alternately with orange juice, beginning and ending with flour mixture. Mix after each addition.
- Pour batter into a greased and floured 9- x 5- x 3-inch loafpan. Bake at 350° for 55 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 5 minutes; remove from pan, and let cool completely on a wire rack.
