- single pie crust:
- 3/4 cup flour
- 1/4 cup (1/2 stick) frozen butter
- 4 tbls iced water
- Custard filling:
- 3 eggs
- 1/4 cup light organic sugar
- 1/4 cup dark brown sugar
- 1/2 cup light corn syrup
- 1/2 cup sugar cane syrup
- 1/3 cup butter, melted and cooled
- 1/2 tsp salt
- 1/2 ounce Bourbon or Cognac
- 1 cup pecans, broken into small pieces amd lightly toasted
Method
- Prepare pie crust:
- Cut butter in small pieces and place them with the flour in a food processor. Pulse until incorporated and small pieces remain. Add water, a tablespoon at a time to mixture while pulsing until it forms a ball. Roll out and place in pie pan.
- Custard filling:
- Place all ingredients, except nuts, in a mixing bowl and beat at medium speed until combined.
- Add nuts.
- Pour batter into pie shell.
- Bake 45 minutes, or until set, at 375 degrees.
- Cool and serve with whipped cream or vanilla ice cream.
