Ingredients

  • single pie crust:
  • 3/4 cup flour
  • 1/4 cup (1/2 stick) frozen butter
  • 4 tbls iced water
  • Custard filling:
  • 3 eggs
  • 1/4 cup light organic sugar
  • 1/4 cup dark brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup sugar cane syrup
  • 1/3 cup butter, melted and cooled
  • 1/2 tsp salt
  • 1/2 ounce Bourbon or Cognac
  • 1 cup pecans, broken into small pieces amd lightly toasted

Method

  • Prepare pie crust:
  • Cut butter in small pieces and place them with the flour in a food processor. Pulse until incorporated and small pieces remain. Add water, a tablespoon at a time to mixture while pulsing until it forms a ball. Roll out and place in pie pan.
  • Custard filling:
  • Place all ingredients, except nuts, in a mixing bowl and beat at medium speed until combined.
  • Add nuts.
  • Pour batter into pie shell.
  • Bake 45 minutes, or until set, at 375 degrees.
  • Cool and serve with whipped cream or vanilla ice cream.
