Ingredients

  • 1 c. flour
  • 1 c. sugar
  • 1 lb. pecans
  • 1 lb. chopped dates
  • 1 c. candied fruit, chopped (cherries or pineapple or both to make 1 c.)
  • 3 eggs
  • 1 tsp. vanilla
  • 1/4 tsp. salt

Method

  • Sift flour and sugar together.
  • Mix nuts and fruit.
  • Beat eggs, vanilla and salt; add flour mixture.
  • Pour over fruit and nut mixture; work with hands until thoroughly blended.
  • Bake in loaf pan lined with wax paper.
  • Bake at 275° for 2 1/2 hours. Remove wax paper immediately after baking.
