Ingredients

  • 1 lb. sugar
  • 1 lb. butter
  • 1 lb. flour (bread)
  • 1 lb. white raisins
  • 2 c. pecans, broken up
  • 6 eggs
  • 1 (1 oz.) bottle lemon extract
  • 1 1/2 tsp. baking powder

Method

  • Cream butter and sugar; add extract.
  • Add eggs, one at a time. Sift flour and baking powder; add gradually, reserving enough to dredge nuts and raisins, then fold them into the cake mixture. Pour into large angel cake pan, completely lined with brown paper, not greased.
  • Bake at 300° for 1 hour and 45 minutes or until lightly browned.
