Ingredients

  • 1 pkg. lime flavored gelatin (3 oz. pkg.)
  • 1 c. boiling water
  • 1/2 c. sour cream or cream cheese
  • 1/2 c. mayonnaise
  • 1 c. broken pecans
  • 2/3 c. mashed avocado
  • 1/2 c. chopped green pepper
  • 1 tsp. minced celery
  • 1/2 tsp. salt
  • 1 tsp. minced onion

Method

  • Dissolve gelatin in hot water.
  • Refrigerate until thickened to consistency of unbeaten egg white, then whip until foamy.
  • Beat in sour cream and mayonnaise until thoroughly blended.
  • Fold in pecans, avocados, onion, celery, green pepper and salt.
  • Pour into 1-quart mold.
  • Refrigerate until firm.
  • Unmold and garnish as desired.
  • Serves 6 to 8.
