- 1 pkg. lime flavored gelatin (3 oz. pkg.)
- 1 c. boiling water
- 1/2 c. sour cream or cream cheese
- 1/2 c. mayonnaise
- 1 c. broken pecans
- 2/3 c. mashed avocado
- 1/2 c. chopped green pepper
- 1 tsp. minced celery
- 1/2 tsp. salt
- 1 tsp. minced onion
Method
- Dissolve gelatin in hot water.
- Refrigerate until thickened to consistency of unbeaten egg white, then whip until foamy.
- Beat in sour cream and mayonnaise until thoroughly blended.
- Fold in pecans, avocados, onion, celery, green pepper and salt.
- Pour into 1-quart mold.
- Refrigerate until firm.
- Unmold and garnish as desired.
- Serves 6 to 8.
