Ingredients

  • 12 ounces spaghetti or 12 ounces linguine
  • 14 cup soy sauce
  • 1 cup chicken broth
  • 12 cup peanut butter
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 teaspoons garlic, minced
  • 2 cups Broccolini, slaw or 2 cups packaged coleslaw mix
  • 1 cup carrot, grated
  • 2 cups cooked chicken, diced (optional)

Method

  • Bring a large pot of salted water to a boil and then add pasta to pot.
  • Cover with a lid for faster boiling.
  • In a microwave-safe bowl or measuring cup, stir together soy sauce, peanut butter, chicken broth, sesame oil, honey and garlic.
  • Microwave on high for 2 to 2 1/2 minutes to melt peanut butter.
  • Stir and reserve.
  • During last 3 minutes of pasta cooking time, add the broccoli and carrot.
  • Drain quickly, but do not rinse.
  • Return to pot and toss with chicken and peanut sauce.
