Ingredients

  • 5 tbsp butter
  • 1/2 cup smooth peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 1 None large egg
  • 1 cup roasted unsalted peanuts, coarsely chopped
  • 1.5 oz chocolate-coated honeycomb bar, coarsely chopped
  • 1 cup self-rising flour, plus 2 tbsp

Method

  • Preheat oven to 350°F. Grease and line 3 baking trays with parchment paper.
  • Beat butter, peanut butter and sugar until pale and fluffy. Beat in egg until just combined. Stir in peanuts and honeycomb. Fold in sifted flour.
  • Roll 1 1/2 tbsp of mixture into balls. Place 1 inch apart on trays. Flatten slightly with a fork. Bake for 15 mins, or until lightly browned. Let cool on baking trays.
