Ingredients

  • 1/4 c. chunky peanut butter
  • 1/2 c. honey
  • 3 tbsp. vegetable oil
  • 2 Large eggs
  • 1/2 c. grated carrots
  • 2 bananas, mashed
  • 1/4 c. low fat lowfat milk
  • 1/4 teaspoon grnd cinnamon
  • 1/4 teaspoon grnd cloves
  • 1/4 teaspoon grnd nutmeg
  • 1 teaspoon vanilla extract
  • Healthy pinch of salt
  • 1 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1 3/4 c. white wheat flour

Method

  • Preheat oven to 300 degrees.
  • Grease a 9"x5" loaf pan.
  • In a mixing bowl, blend together the peanut butter, honey, oil, Large eggs, carrots and bananas.
  • Add in lowfat milk, spices, vanilla, salt, baking pwdr, baking soda and flour.
  • Blend together well.
  • Pour the batter into the pan and bake for 1 1/4 hrs or possibly till a toothpick comes out clean.
  • Cold on a wire rack.
