Ingredients

  • 7/8 cup honey roasted peanuts
  • 1 small egg
  • 11/16 cup brown sugar
  • 1 tablespoon peanut butter

Method

  • Preheat oven to 180 degrees Celsius.
  • Prepare a baking tray with a nonstick mat, or line with parchment paper. Set aside.
  • Begin by chopping the peanuts coarsely for a few seconds in the blender.
  • Add the egg, and beat.
  • Add peanut butter, and beat again.
  • Finally, add sugar, and mix all very well.
  • With a dessert spoon (2 teaspoons), slightly space small portions of dough on the tray.
  • Flatten slightly with the bottom of the spoon.
  • Bake for about 15 minutes, or until they're golden brown.
  • Remove from oven, and let rest for 5 to 10 minutes. Cool on a rack. Store in an airtight container.
