Ingredients
- 7/8 cup honey roasted peanuts
- 1 small egg
- 11/16 cup brown sugar
- 1 tablespoon peanut butter
Method
- Preheat oven to 180 degrees Celsius.
- Prepare a baking tray with a nonstick mat, or line with parchment paper. Set aside.
- Begin by chopping the peanuts coarsely for a few seconds in the blender.
- Add the egg, and beat.
- Add peanut butter, and beat again.
- Finally, add sugar, and mix all very well.
- With a dessert spoon (2 teaspoons), slightly space small portions of dough on the tray.
- Flatten slightly with the bottom of the spoon.
- Bake for about 15 minutes, or until they're golden brown.
- Remove from oven, and let rest for 5 to 10 minutes. Cool on a rack. Store in an airtight container.
