Ingredients
- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1/2 c. milk
- 3 Tbsp. oleo
- 3 1/4 oz. pkg. vanilla pudding (not instant)
- 1 (15 oz.) can well drained peaches (save juice) *
- 1 (8 oz.) pkg. cream cheese
- 1/2 c. sugar
- 3 Tbsp. juice saved from can
- 1 Tbsp. sugar
- 1/2 tsp. cinnamon
Method
- Combine flour, baking powder, salt, egg, milk, oleo and pudding (not instant).
- Beat mixture for 2 minutes on medium speed of mixer.
- Pour into a 10-inch pie plate (greased).
- Place well drained peaches over mixture (save juice).
- Combine cream cheese, sugar and the reserved juice.
- Spoon over peaches.
- Combine sugar and cinnamon.
- Sprinkle over cream cheese.
- Bake at 350° for 30 to 35 minutes, until golden brown.
- Filling will appear soft.
