Ingredients
- firm, but ripe peaches
- thinly sliced prosciutto
- EVOO & truffle oil
- truffle honey
- lemon juice
- S&P, red pepper flakes
- cojito cheese
Method
- Peach slices, wrapped up in prosciutto- a drizzle of lemon juice, olive oil, a drop of truffle oil and truffle honey. Arranged on a plate in a spriral, put some crumbled cojito cheese atop, drizzle with the dressing, some fresh cracked pepper and a couple shakes of red pepper flakes.
