Ingredients

  • 1 1/2 c. flour
  • 3/4 tsp. salt
  • 1/2 tsp. soda
  • 1 c. sugar
  • 2 eggs, well beaten
  • 1/2 c. salad oil
  • 1 1/4 c. fresh peaches
  • 1/2 tsp. vanilla
  • 1/8 tsp. almond extract
  • 1/2 c. almonds, chopped (optional)

Method

  • Combine flour, salt, soda and sugar.
  • Make a well in center of dry ingredients.
  • Add eggs and oil.
  • Stir only until dry ingredients are moistened.
  • Stir in peaches, vanilla, almond extract and nuts.
  • Measure 1/3 cup batter for each muffin.
  • Bake at 350° for 20 to 25 minutes or until muffins test done. (For peach bread, spray 9-inch loaf pan with Pam and spoon batter in pan.
  • Bake for 1 hour or until tests done.)
  • Make 12 muffins or 1 9-inch loaf.
