Ingredients
- 1 1/2 c. flour
- 3/4 tsp. salt
- 1/2 tsp. soda
- 1 c. sugar
- 2 eggs, well beaten
- 1/2 c. salad oil
- 1 1/4 c. fresh peaches
- 1/2 tsp. vanilla
- 1/8 tsp. almond extract
- 1/2 c. almonds, chopped (optional)
Method
- Combine flour, salt, soda and sugar.
- Make a well in center of dry ingredients.
- Add eggs and oil.
- Stir only until dry ingredients are moistened.
- Stir in peaches, vanilla, almond extract and nuts.
- Measure 1/3 cup batter for each muffin.
- Bake at 350° for 20 to 25 minutes or until muffins test done. (For peach bread, spray 9-inch loaf pan with Pam and spoon batter in pan.
- Bake for 1 hour or until tests done.)
- Make 12 muffins or 1 9-inch loaf.
