Ingredients

  • 3 c. fresh or frozen peaches, sweetened
  • 2 1/2 Tbsp. tapioca
  • 1 1/2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 6 Tbsp. butter
  • 1 egg
  • 1/3 c. milk
  • 3/4 c. sugar
  • 1/2 c. water
  • 3 Tbsp. butter

Method

  • Put tapioca over peaches; add sugar, if needed.
  • Place in buttered baking dish.
  • Sift together the flour, baking powder and salt.
  • Cut in 6 tablespoons butter.
  • Beat the egg with the
  • milk; stir into flour mixture.
  • Drop by spoonfuls over peaches.
  • Bring to boil 3/4 cup sugar, 1/2 cup water and 3 tablespoons butter. Pour this over batter.
  • Bake in a 375° oven for 45 minutes.
  • Serve warm with ice cream or whipped cream.
