Ingredients
- 3 c. fresh or frozen peaches, sweetened
- 2 1/2 Tbsp. tapioca
- 1 1/2 c. flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 6 Tbsp. butter
- 1 egg
- 1/3 c. milk
- 3/4 c. sugar
- 1/2 c. water
- 3 Tbsp. butter
Method
- Put tapioca over peaches; add sugar, if needed.
- Place in buttered baking dish.
- Sift together the flour, baking powder and salt.
- Cut in 6 tablespoons butter.
- Beat the egg with the
- milk; stir into flour mixture.
- Drop by spoonfuls over peaches.
- Bring to boil 3/4 cup sugar, 1/2 cup water and 3 tablespoons butter. Pour this over batter.
- Bake in a 375° oven for 45 minutes.
- Serve warm with ice cream or whipped cream.
