Ingredients

  • 1 c. flour
  • 3/4 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 4 Tbsp. butter
  • 1 large egg
  • 1/4 c. milk
  • 2 1/2 lb. peaches
  • 4 tsp. cornstarch
  • 1/4 tsp. ground cinnamon

Method

  • In bowl, combine 2 tablespoons sugar with flour, baking powder and salt; then cut in butter.
  • Combine egg and milk and mix, stirring just until moist.
  • Pit, peel and slice peaches; combine in a saucepan with remaining sugar, cornstarch and cinnamon.
  • Cook medium heat until syrup is clear, thick and boiling 5 to 7 minutes.
  • Pour into a 2-quart baking dish and drop dough in heaping tablespoons.
  • Makes 6 portions.
  • Bake at 400° until golden, about 20 minutes.
  • Serve warm with ice cream.
