Ingredients
- 1 c. flour
- 3/4 c. sugar
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 4 Tbsp. butter
- 1 large egg
- 1/4 c. milk
- 2 1/2 lb. peaches
- 4 tsp. cornstarch
- 1/4 tsp. ground cinnamon
Method
- In bowl, combine 2 tablespoons sugar with flour, baking powder and salt; then cut in butter.
- Combine egg and milk and mix, stirring just until moist.
- Pit, peel and slice peaches; combine in a saucepan with remaining sugar, cornstarch and cinnamon.
- Cook medium heat until syrup is clear, thick and boiling 5 to 7 minutes.
- Pour into a 2-quart baking dish and drop dough in heaping tablespoons.
- Makes 6 portions.
- Bake at 400° until golden, about 20 minutes.
- Serve warm with ice cream.
