Ingredients
- 2 Cornish hens
- 1 large onion, sliced
- 2 cloves garlic, chopped
- 1 tsp. parsley
- 1 tsp. paprika
- salt to taste
- pepper (black optional)
- 1 Knorr chicken bouillon
- 2 c. crushed tomatoes
- 5 Tbsp. olive oil (more if needed)
- 1 c. red wine
- 1 c. water
- 1 tsp. mustard
Method
- Remove skin off chicken and cut into pieces.
- Brown onion and garlic in olive oil.
- Add chicken and spices.
- Brown chicken on both sides.
- Add crushed tomatoes and cook for 2 to 3 minutes. Add wine, water, bouillon and mustard.
- Bring to a boil.
- Reduce heat and cook on low for 30 minutes in a covered pot.
- Simmer for another 5 minutes and serve with rice.
- Serves 4.
