Ingredients

  • 2 Cornish hens
  • 1 large onion, sliced
  • 2 cloves garlic, chopped
  • 1 tsp. parsley
  • 1 tsp. paprika
  • salt to taste
  • pepper (black optional)
  • 1 Knorr chicken bouillon
  • 2 c. crushed tomatoes
  • 5 Tbsp. olive oil (more if needed)
  • 1 c. red wine
  • 1 c. water
  • 1 tsp. mustard

Method

  • Remove skin off chicken and cut into pieces.
  • Brown onion and garlic in olive oil.
  • Add chicken and spices.
  • Brown chicken on both sides.
  • Add crushed tomatoes and cook for 2 to 3 minutes. Add wine, water, bouillon and mustard.
  • Bring to a boil.
  • Reduce heat and cook on low for 30 minutes in a covered pot.
  • Simmer for another 5 minutes and serve with rice.
  • Serves 4.
