Ingredients

  • 1 medium onion
  • 1 green pepper (optional)
  • 1 or 2 cloves garlic
  • 1 lb. ground turkey
  • 1/2 lb. mushrooms (optional)
  • 1 Tbsp. cooking oil
  • 1 can tomatoes
  • 1/2 tsp. salt
  • 1 tsp. oregano
  • 1/2 tsp. basil
  • 1/4 tsp. pepper or to taste
  • 2 c. uncooked (about 4 cups cooked) macaroni or other pasta (shells, curls, etc.)
  • grated cheese and/or bread crumbs (for topping)

Method

  • Crush and chop garlic and dice onion and green pepper; saute over low heat in oil until translucent and limp.
  • Add ground turkey and brown slowly over low heat.
  • When turkey is cooked through, add tomatoes, salt, pepper, oregano and basil.
  • If desired, add mushrooms.
  • Simmer over low heat for 15 to 20 minutes.
