Ingredients

  • 11 oz dried pasta
  • 1 bunch scallions, trimmed and sliced
  • 1/2 lb radish, sliced
  • 1 None cucumber, halved lengthways and sliced
  • 1 head romaine lettuce, leaves torn
  • 1 cup low fat mayonnaise
  • 1 1/3 cup yogurt
  • Pinch None curry powder

Method

  • Cook the pasta in salted boiling water according to the package directions. Drain. Rinse in cold water and set aside to cool completely.
  • Place the scallions in a bowl with the radish, cucumber, lettuce with the cooled pasta and mix well.
  • For the dressing, place the mayonnaise in a small bowl with the yogurt and curry powder. Season to taste with salt and freshly ground black pepper. Coat the pasta in the dressing, toss well and serve.
