Ingredients

  • 1 c. corkscrew macaroni
  • 2 small carrots, sliced
  • 2 green onions, chopped
  • 1 (2 oz.) jar pimientos, drained
  • 1 c. kidney beans
  • 3/4 c. sliced celery
  • 1/4 c. cooked English peas
  • 2 Tbsp. chopped parsley
  • 1/4 c. Italian dressing
  • 2 Tbsp. mayonnaise
  • 1/8 tsp. dried marjoram
  • 1/8 tsp. pepper
  • lettuce leaves
  • 2 tomatoes
  • 2 boiled eggs

Method

  • Cook macaroni according to directions; drain.
  • Combine next 11 ingredients; toss well.
  • Chill at least 1 hour.
  • Spoon into lettuce lined dish.
  • Arrange tomato slices and egg wedges around edges.
  • Garnish with parsley.
