- 1 c. corkscrew macaroni
- 2 small carrots, sliced
- 2 green onions, chopped
- 1 (2 oz.) jar pimientos, drained
- 1 c. kidney beans
- 3/4 c. sliced celery
- 1/4 c. cooked English peas
- 2 Tbsp. chopped parsley
- 1/4 c. Italian dressing
- 2 Tbsp. mayonnaise
- 1/8 tsp. dried marjoram
- 1/8 tsp. pepper
- lettuce leaves
- 2 tomatoes
- 2 boiled eggs
Method
- Cook macaroni according to directions; drain.
- Combine next 11 ingredients; toss well.
- Chill at least 1 hour.
- Spoon into lettuce lined dish.
- Arrange tomato slices and egg wedges around edges.
- Garnish with parsley.
