Ingredients

  • 4 oz. uncooked noodles (about 2 c.)
  • 1/3 c. thinly sliced celery (2 stalks)
  • 1/3 c. green beans (about 15 beans), cut into 1/2 pieces
  • 1/3 c. carrots, diced to 1/4-inch chunks
  • 1/3 c. red onion, sliced
  • 2 Tbsp. green pepper, cut into short strips
  • 1/2 tsp. basil leaves
  • 1/4 tsp. salt
  • 1/8 tsp. garlic powder
  • dash of pepper
  • 1 tsp. oil
  • 1/3 c. frozen green peas
  • 1 tsp. flour
  • 1 tsp. margarine
  • 3/4 c. skim milk

Method

  • Cook noodles according to package directions. Stir-fry fresh vegetables and seasonings in oil for 5 minutes.
  • Add frozen peas. Cover and reduce heat for an additional 2 minutes until vegetables are tender but crisp.
  • Set aside.
  • Mix flour and margarine in frying pan and slowly add milk.
  • Stir constantly and cook until thickened (the sauce will be thin). Stir sauce into noodles and add vegetables.
  • Mix gently.
  • Heat to serving temperature.
  • Makes 4 servings.
  • Can add white chicken meat.
