- 4 oz. uncooked noodles (about 2 c.)
- 1/3 c. thinly sliced celery (2 stalks)
- 1/3 c. green beans (about 15 beans), cut into 1/2 pieces
- 1/3 c. carrots, diced to 1/4-inch chunks
- 1/3 c. red onion, sliced
- 2 Tbsp. green pepper, cut into short strips
- 1/2 tsp. basil leaves
- 1/4 tsp. salt
- 1/8 tsp. garlic powder
- dash of pepper
- 1 tsp. oil
- 1/3 c. frozen green peas
- 1 tsp. flour
- 1 tsp. margarine
- 3/4 c. skim milk
Method
- Cook noodles according to package directions. Stir-fry fresh vegetables and seasonings in oil for 5 minutes.
- Add frozen peas. Cover and reduce heat for an additional 2 minutes until vegetables are tender but crisp.
- Set aside.
- Mix flour and margarine in frying pan and slowly add milk.
- Stir constantly and cook until thickened (the sauce will be thin). Stir sauce into noodles and add vegetables.
- Mix gently.
- Heat to serving temperature.
- Makes 4 servings.
- Can add white chicken meat.
