Ingredients
- 4 tbsp dry breadcrumbs
- 4 tbsp grated parmesan cheese
- 2 tbsp chopped fresh basil leaves or 2 tsp dried basil leaves
- 1 tsp paprika
- 1 dash pepper
- 1 lb Ocean Perch fillets
- 2 tbsp margarine, melted
- 1 tbsp chopped fresh parsley
Method
- Move oven rack to position slightly above middle of oven
- Heat oven to 375F.
- Spray rectangular pan, 13 x 9 x 2", with cooking spray.
- Mix all ingredients except fish, margarine and parsley.
- Brush both sides of fish with margarine, dip nto crumb mixture, coating both sides.
- Place fish in pan.
- Bake uncovered 15 t 20 minutes or until fish flakes easily with a fork.
- Sprinkle with parsley.
- Serve with a colourful and crunchy coleslaw.
