Ingredients

  • 4 tbsp dry breadcrumbs
  • 4 tbsp grated parmesan cheese
  • 2 tbsp chopped fresh basil leaves or 2 tsp dried basil leaves
  • 1 tsp paprika
  • 1 dash pepper
  • 1 lb Ocean Perch fillets
  • 2 tbsp margarine, melted
  • 1 tbsp chopped fresh parsley

Method

  • Move oven rack to position slightly above middle of oven
  • Heat oven to 375F.
  • Spray rectangular pan, 13 x 9 x 2", with cooking spray.
  • Mix all ingredients except fish, margarine and parsley.
  • Brush both sides of fish with margarine, dip nto crumb mixture, coating both sides.
  • Place fish in pan.
  • Bake uncovered 15 t 20 minutes or until fish flakes easily with a fork.
  • Sprinkle with parsley.
  • Serve with a colourful and crunchy coleslaw.
