Ingredients

  • 1 1/2 c. all-purpose flour
  • 1/4 c. brown sugar
  • 1/2 c. chopped pecans
  • 1/2 c. melted butter
  • 1 (8 oz.) cream cheese
  • 1 3/4 c. powdered sugar
  • 8 oz. Cool Whip
  • 1 (3 oz.) pkg. peach Jell-O
  • 1 c. boiling water
  • 3/4 c. cold water
  • 4 peaches, peeled and sliced

Method

  • Combine flour, sugar and pecans.
  • Add margarine; mix well. Press this mixture in bottom of 13 x 9 x 2-inch pan.
  • Bake 25 minutes at 350°.
  • Cool.
  • Beat cream cheese and powdered sugar until light and fluffy.
  • Fold in the Cool Whip.
  • Spread over the cooled crust.
  • Dissolve gelatin in boiling water; add cold water. Chill to consistency of unbeaten egg whites.
  • Put peach slices over cheese mixture.
  • Spoon chilled gelatin over peaches.
  • Cover and chill until firm.
  • This may need adjusting; for some ovens, 25 minutes is too long.
