Ingredients
- 1 1/2 c. all-purpose flour
- 1/4 c. brown sugar
- 1/2 c. chopped pecans
- 1/2 c. melted butter
- 1 (8 oz.) cream cheese
- 1 3/4 c. powdered sugar
- 8 oz. Cool Whip
- 1 (3 oz.) pkg. peach Jell-O
- 1 c. boiling water
- 3/4 c. cold water
- 4 peaches, peeled and sliced
Method
- Combine flour, sugar and pecans.
- Add margarine; mix well. Press this mixture in bottom of 13 x 9 x 2-inch pan.
- Bake 25 minutes at 350°.
- Cool.
- Beat cream cheese and powdered sugar until light and fluffy.
- Fold in the Cool Whip.
- Spread over the cooled crust.
- Dissolve gelatin in boiling water; add cold water. Chill to consistency of unbeaten egg whites.
- Put peach slices over cheese mixture.
- Spoon chilled gelatin over peaches.
- Cover and chill until firm.
- This may need adjusting; for some ovens, 25 minutes is too long.
