Ingredients

  • 1 cup low fat cottage cheese
  • 3 tablespoons firmly packed brown sugar
  • 2 tablespoons skim milk
  • 1 teaspoon vanilla extract
  • 12 teaspoon coconut extract
  • 16 cantaloupe balls
  • 16 honeydew balls
  • 16 pineapple chunks
  • 16 red seedless grapes
  • 8 eight-inch bamboo skewers

Method

  • To prepare dip:
  • In blender container, combine all dip ingredients.
  • Blend until smooth.
  • Spoon into a bowl and chill several hours or overnight.
  • To prepare kabobs:.
  • Have fruit well chilled.
  • Alternate fruit on skewers, placing 2 pieces of each fruit on each skewer.
  • Serve with dipping sauce.
