Ingredients
- 1 cup low fat cottage cheese
- 3 tablespoons firmly packed brown sugar
- 2 tablespoons skim milk
- 1 teaspoon vanilla extract
- 12 teaspoon coconut extract
- 16 cantaloupe balls
- 16 honeydew balls
- 16 pineapple chunks
- 16 red seedless grapes
- 8 eight-inch bamboo skewers
Method
- To prepare dip:
- In blender container, combine all dip ingredients.
- Blend until smooth.
- Spoon into a bowl and chill several hours or overnight.
- To prepare kabobs:.
- Have fruit well chilled.
- Alternate fruit on skewers, placing 2 pieces of each fruit on each skewer.
- Serve with dipping sauce.
