Ingredients

  • 2 pounds new potatoes cut into small chunks
  • 2 onions peeled and sliced
  • 4 garlic cloves peeled and halved
  • 9 ounces mushrooms small, brushed clean
  • 11 ounces carrots peeled and sliced
  • 2 1/4 pounds turkey thighs boneless, skinless, cut into chunks
  • 2 tablespoons honey
  • 4 tablespoons sunflower oil
  • 3 teaspoons paprika
  • 3 sprigs fresh marjoram to garnish
  • sour cream or creme fraiche, to serve

Method

  • Preheat the oven to 400°F. Place the potatoes, onion, garlic, mushrooms, carrot and turkey in a large bowl. Add the honey, oil and paprika and season well with salt and freshly ground black pepper.
  • Spread out onto a large baking sheet and add 1 cup water. Roast in the oven for 1 hour, covering loosely with aluminum foil for the last 20 mins of roasting time. Serve garnished with marjoram sprigs and with spoonfuls of sour cream or creme fraiche.
