Ingredients

  • 1/2 lb. shrimp
  • 2 minced garlic cloves
  • 1 Tbsp. butter
  • 1 Tbsp. cornstarch
  • 1 1/4 c. chicken broth
  • 1 (14 1/2 oz.) stewed tomatoes with juice
  • 1/2 c. sliced pepperoni
  • 1 thawed pkg. Birds Eye green peas and onion
  • 1/4 tsp. cayenne
  • 1 1/2 c. dry Minute rice
  • 1/8 tsp. saffron

Method

  • Cook garlic and butter in 2 1/2 quart microwave-safe dish on High for 1 minute.
  • Blend cornstarch with broth and add with remaining ingredients to garlic mixture.
  • Cover and cook 8 to 10 minutes or until thickened.
  • Stir twice and fluff with fork.
