Ingredients
- 1/2 lb. shrimp
- 2 minced garlic cloves
- 1 Tbsp. butter
- 1 Tbsp. cornstarch
- 1 1/4 c. chicken broth
- 1 (14 1/2 oz.) stewed tomatoes with juice
- 1/2 c. sliced pepperoni
- 1 thawed pkg. Birds Eye green peas and onion
- 1/4 tsp. cayenne
- 1 1/2 c. dry Minute rice
- 1/8 tsp. saffron
Method
- Cook garlic and butter in 2 1/2 quart microwave-safe dish on High for 1 minute.
- Blend cornstarch with broth and add with remaining ingredients to garlic mixture.
- Cover and cook 8 to 10 minutes or until thickened.
- Stir twice and fluff with fork.
