Ingredients
- 1 large egg
- 3/4 c. sugar
- 1 tsp. vanilla
- 1/4 c. all-purpose flour
- 1 c. coarsely chopped, peeled apples
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. chopped nuts
Method
- Combine sugar and vanilla in bowl; beat until light and fluffy.
- Stir together flour, baking powder and salt; blend into egg mixture.
- Fold in nuts and fruit.
- Turn into buttered 9-inch square baking pan; bake in 350° oven for 25 minutes.
- Serve plain or topped with whipped cream or ice cream.
- Also excellent with vanilla pudding, hot or cold.
