Ingredients

  • 1 large egg
  • 3/4 c. sugar
  • 1 tsp. vanilla
  • 1/4 c. all-purpose flour
  • 1 c. coarsely chopped, peeled apples
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. chopped nuts

Method

  • Combine sugar and vanilla in bowl; beat until light and fluffy.
  • Stir together flour, baking powder and salt; blend into egg mixture.
  • Fold in nuts and fruit.
  • Turn into buttered 9-inch square baking pan; bake in 350° oven for 25 minutes.
  • Serve plain or topped with whipped cream or ice cream.
  • Also excellent with vanilla pudding, hot or cold.
