Ingredients

  • 1 lb. low-fat ground beef
  • 1 medium onion, chopped
  • 1 (1 1/2 oz.) pkg. taco seasoning mix
  • 1 c. water or beef broth
  • 1 (16 oz.) can refried beans
  • 1 (8 oz.) can crescent dinner rolls
  • 3/4 lb. medium sharp cheese, grated
  • 1 small can mild green chili peppers
  • 1 (10 oz.) bag corn chips, crushed
  • shredded lettuce (optional)
  • diced tomatoes (optional)
  • sliced ripe olives (optional)
  • hot sauce (optional)
  • sour cream (optional)
  • grated sharp cheese (optional)

Method

  • Brown ground beef with onion; drain well.
  • Add taco seasoning, water and refried beans.
  • Press crescent rolls into 7 1/2 x 11 3/4-inch greased casserole dish, forming a crust.
  • Layer crushed corn chips over crust.
  • Pour ground beef mixture on top.
  • Cover with grated cheese.
  • Bake at 350° for 25 to 30 minutes.
  • Cut into squares; serve with condiments of your choice on top.
  • Serves 8.
